Nice programs for 7 to 11 year olds. The altitude helps it stay cooler.

Conveniently placed scout camp a couple minutes outside the city. Plenty of shade in almost all areas. Facilities include a nice lodge, restrooms, and shower house along others. The entire camp parallels the canyon road so bring ear plugs.

I'm not sure depending on which camp they are going to will depend on what for instance if they are 8-9 (or younger) they will need lunch and water bug spray and sunscreen and hat would be nice if they are 10 the same things plus a swimming suit and towel if you boys are boy scouts the same things that have already been said plus one night they will spend the night so they need sleeping stuff dinner for that night and breakfast. All camps have trading posts so money is an opposition also they need a heath form. That can be found on BSA's website under forms. Leaders should know the information. Hope this helps.
