It's a Mexican restaurant, so yes absolutely. They serve high quality south american food.
I can only speak for the Fishkill location. When my mom and I went there for dinner we were pleasantly surprised. They are keeping their own tracking by taking a name and number for each table. There is plexiglass been booths. The entire time I was there eating employees were wipingg surfaces down.

I didn't see ANY vegan menu offerings, but your guest should be able to pick and choose things from the menu that would qualify- black beans, rice, corn tortillas, salad ect.
