I have been here twice. The pastries are good with the top prize going to the morning bun. On my second visit I purchased a loaf of Levain. I saw that all of the breads were very dark but decided to give them the benefit of the doubt. Got it home and it was a chore cutting through it with a serrated bread knife. There website describes a vision of allowing a caramelized crust to form to bring out the natural flavor of the grains. Well what i received was a carbonized, tough loaf that had a burnt flavor and barely edible.

I think it's online orders mainly, or walk-up to get what might be left in inventory for the day. When we came by, no customers were allowed inside the small shop. It was pick-up only from outside the doorway. Excellent pastries!

I'm not certain of the origin of the name of the Raleigh bakery, but 'boult' is an alternative spelling of 'bolt' meaning "to sift," as in passing flour through a sieve.
