They are whole brisket from our cows. We are a small business so they are not graded grading only occurs in large slaughterhouses. However they're going to all be in that choice or prime range. They are 1299 a pound fresh and you will need to pre-order because we sell them and we also use them to smoke in our shop for smoked brisket that we serve customers. They're going to range in weight from about 12 to 19 lb depend on the size of the cow if you want one just let me know and we will have it cut out from our cows. You just need to let me know and I need to make sure that the slaughterhouse is actually open since it's the holiday season
