10th plus year buying and serving HoKa fresh turkey for Thanksgiving and it’s hands down, the best turkey you can buy. I love not having to worry about thawing because it was never frozen (beware some grocery chains freeze the birds to offer again at Christmas but ask your grocer to be certain you are getting the fresh product, which is never frozen!). I dry brine with coarse salt under the skin after I do the Julia Child style dark meat removal (it turns into an easily sliced roulade). White and dark meat do not cook at the same rate so just remove the dark and do as she directs, and then they can be cooked in the same oven, at the same time to the correct done-ness for both. The now smaller dark meat will have greater surface area prepared, and thus will cook through to the much higher temp that tastes best for dark without making a dry turkey breast. Buy an in oven probe thermometer that alerts you when the breast is done to temp (don’t guess- that’s a fool’s game). My only gripe is that some years I have had to pick stray feather shafts before starting to season but 2019 was fine. 2018 and 17, I was less happy with that aspect but all around, this bird is so worth it if you want a showpiece that tastes great for your family. The quality is obvious. My husband hated having turkey for the holidays until I brought home a HoKa and he looks forward to Thanksgiving at home every year. If we are obliged to visit family for the holiday, he insists we do our own bird too, and is always quietly judgy of the pop-up timer mass produced poultry everyone else serves now that he’s had really great quality turkey farmed properly.

We have a limited amount of 8/9 pound birds, but do have 10/11pound birds.
We will have some birds in the thirty pound range. You can purchase it anytime.
If you are getting just one turkey, you don't need to place an order. You can come out to the farm and purchase it at any time. If you want to buy more than ten turkeys, please call us and place an order.
You can keep our turkey fresh in your refrigerator for 5 days
It is illegal to use hormones or steroids in poultry. We do not use them.
Personally, we do not brine. It is up to you if you want to or not.
Our fresh turkey will only last 5 days in your refrigerator. Please freeze it until closer to Thanksgiving.
We have breasts available and they are frozen. We also have smoked (fresh) breasts available.

We do carry smoked whole turkeys and smoked breasts. Our turkeys are not organic, but are free range, hormone free (as is all poultry). We do not inject our processed turkeys with any kind of solution.
