Thanks again for your hard work for another amazing animal!! Butcher said hanging weight was 775lbs!!! Massive lol. Woooo!! Food for a year+. And the crazy part is cuts like ribeye and filet mignon go for around $20-$40 per pound at regularly grocery store! Compared to TX around $8-9 a pound with the harvest !

Thank you very much! I picked it all up on Friday and the meat looks great. My wife's birthday was on Sunday and I whipped out the sous vide and made some fillet mignon -- the perfect meal for a special occasion. I bought an upright freezer (13.8 cubic feet) and it just fit the half beef. That was one big animal! I'm going to be doing some organizing soon so we can find everything. I'm looking forward to trying a bunch of cuts that I've never had before.
