Widmer's Cheese Cellars was a fun place to visit on the way to Oshkosh, WI. It is barely off the main highway. Well worth the short trip. When you enter you see where the cheese is made. We watch them making both Cheese Curds and block of Cheddar Cheese. You can see exactly what we saw in the pictures. You can buy all the various cheeses Widmer's Cheese Cellars makes right there when you visit. The prices are VERY reasonable for such a wonderful product.

Fantastic side trip on the way to Door County from Milwaukee. Their brick spread is the best. An awesome tangy alternative to cream cheese.

Best customer service! I ordered for the first time from them and because of a snowstorm FedEx was not able to deliver on time and two of my cheeses were ruined. When I contacted Widmer's, they graciously agreed to send me replacements for free. They also included a brick of sharp cheddar. Great way to keep customers!

Hello Carl, we sell Aged Brick Cheese which is the closest thing to Liederkranz Cheese that you can get. Our Aged Brick is a German Washed Rind style type of cheese that has a stronger flavor and aroma much like Liederkranz. We also sell Limburger, but we don't make it here. Thanks for the inquiry! Fresh cheddar curds will not be ready until 11:15 a.m. on a Thursday. Fresh brick curds are typically Monday-Thursday around 1:15 p.m. Thanks!

Hello Chris it varies from day to day! The brick curds are normally fresh on Monday-Thursday. The original cheddar curds are normally made on Thursday's. Once, the curds are under refrigeration they lose their squeakiness. The one way the get that squeakiness back is by placing them in the microwave for no longer than 20 seconds.
We are unable to give tours thru our facility due to government food safety regulations. However, if come to our retail store you will be able to see the cheese making facility. The best time to come is between 7am-10:30am Monday-Friday to view the cheese making in action.

I don 'work there but I have tried their other spreads. All are great they are located in Thersa just off Hwy 41 @ the Hwy 28 exit in Dodge County
And it really depends on the cheese some will mold sooner than others but the mold really won't hurt just cut it off and the rest of the cheese will be fine. It is best to use cheese up sooner than later because it does deteriorate over time. Crazy and cheese will help make it last longer. When was the cheese purchased that would be my next question as far as how old the cheese was that you got and who purchased for you if you did not did they have it sitting around for awhile and for how long was it unrefrigerated?
