This depends on a number of factors (whether you are abroad or in the US at the time of petition, what jurisdiction you live in in the US, etc). Your best bet is to speak to a local immigration attorney who practices family-based immigration.

Can my spouse and minor children get their green cards as part of a single EB-5 investment?

Yes, your spouse and children under 21 years of age can be included in your application since the investment amount is designed to cover the entire immediate family of a principal investor for purposes of investment immigration.

Can I use gifted funds for an EB-5 investment?

Yes, you can use gifted funds for your EB5 investment with a caveat that your giftor would have to provide an affidavit regarding reasons for such gift as well as his documented source of funds for the gift to demonstrate that they were derived by legal means and from legal sources.

Do you charge for an initial consultation with a lawyer?

The fee for an initial consultation is $200. However if the firm is hired, the $200 is credited towards the legal fee.
