I couldn't *not* stop at a place called Beaver Taco, and I'm SO glad I made that decision! I'm from Arizona, so I'm pretty picky about my Mexican food. I loved the ambience and decor, the variety of Mexican candies (the round Rosa marzipan candy was yummy - I'll be looking for those more often!), and while I risk my local joints coming after me for saying this, they had legit the BEST street tacos I've ever had. ❤️ I tried one of the chicken and two carnitas, but would have been happy with three carnitas. The chicken was good, but something about however they made the carnitas was just 🥲🤌💋 I also picked up a cheeky sticker for my suitcase, because... I meeeean... 🤣

A must stop either to or from St. George. They always have the best tacos. They are fast, and the staff is friendly. Lots of different salsa, options to dress your favorite Mexican meal.

We stopped at Beaver Taco while on a road trip. I ordered a chimichanga with carne asada and my spouse ordered a cheese quesadilla. We ordered the meal as dine in, so the fact that it came in a foam box seemed rather odd. The food was hot and we were hungry, so we didn't dwell on it. My chimichanga was fantastic. The tortilla was crispy, the beef had plenty of flavor, there was a great amount of guacamole and sour cream. I had no complaints about the chimichanga. My spouse was not so lucky with her quesadilla. As you can see in the pictures the tortilla was perfectly cooked. It looks a little crispy, but it was perfectly done. The problem with it was the cheese. It had so much cheese and no flavor. The grease was potent. It overpowered the flavor of the cheese and tortilla. It was inedible. If we peeled the tortilla off the cheese, the tortilla was fantastic. I highly recommend the chimi, but unless they change the cheese in the quesadilla, stay away from the quesadilla.

This is a great place for a quick stop for Mexican food between Las Vegas and Salt Lake City. The enchilada sauce is so good and my mini grilled chicken tacos were awesome. The service is excellent and the restaurant is very clean.
