because they're a small multi-state chain. like real great pizza places they use a family recipe that goes back many years from the humble beginnings in a small place one location now expanded out.. most Monical's for the most part also follow a strict standard of how each store should operate. and each location is expected to adhere to it.
Had to send my first pizza back because server did NOT listen. 2nd pie ok but realize this is middle of Illinois not NYC ( where I am from)
I love Monicals pizza, we stop when ever we pass thru. I think it's the really thin crust. Also Their cooking process isn't that the fastest, so I'm presuming every pizza is made to order from scratch. Other places pizza comes out faster and doesn't taste as good, some kind of precooking?
