How come the workers at the waffle house always seem to be nasty and ignore their customers

That hasn't been my experience. Some places ate better than others and with multiple locations, you could always find one that meets your needs better.

All the employees are always very very nice to me

I have never had that, I guess if you are nice you will get it back
