There are 11 open & set tables on the south side of the restaurant, but we were told it's a 30 minute wait. The lobby is full as well as the entryway. Is this usual?

They try not to sit more than they are staffed to handle. Its really either wait 30 min and get seated and be serviced or get seated and wait 30 min for service. Atleast if they tell you up front you can go somewhere else.

Yes. Although, the standard answer is 30 minutes, it is usually less. They do a good job of resetting tables quickly.

Those are probably reserved for a large party.
