i’m a hostess there and i got the answer lol. just because we have the tables doesn’t mean we have the servers. each server has their own section with 3 tables and no more than that. so when i only have 6 servers on and it’s a friday those tables fill up quickly. so when you’re on a wait and see all those”open” tables they’re really not open and the hostess are most likely waiting for other tables to get up so we can get you sat.
I often ask that same question in many restaurants but they are taking a much needed break and shift change.
Perhaps not enough staff...?
