It all depends on when you get your luggage. I would get there as fast as possible. Not sure how late "trains run". There will be a bus that goes around the clock. Other options are Cab or Uber/Lyft. Check RideRTA.com Trains leave airport at 11:38pm; 11:53pm; according to website Better Hustle!! They run later, but don't go all the way to Windermere, so you may have to get on a bus!
