What if I got a job and am homeless but because I turned my paper work in a few days late they shut off my food stamps what should I do?

If you were a few days late, like mine was due Oct 1st, late after the 5th for Nov - so nothing will happen, if I went after Nov 1 then my benefits will be prorated after processing for example.
