All choices are very similar to what you can get at a sports stadium.
You might be better off with local restaurants around. I think the only vegan options would be your typical nachos, and snacks they offer.

Food there is toxic! Stay away from the cafeteria. Starbucks is ok but limited food options. There are hotels and restaurants nearby that would be a much better choice.
I went to the food stop there really isn't a lot. Generally speaking there aren't many vegan places in Illinois. I'm a vegan too and I ate something there I just can't recall what it was. I'm not sure about the surrounding restaurants there most likely you'll find salads
