They carry a few fish powders, so it's worth a look. They have very limited dairy selections and only a medium Japanese selection, so while I am sure they carry kanikama, they may not have prepackaged chikama. You may have better luck at the Japanese market Noble Fish in Clawson.
I'm not sure of the answer to either of those questions they have a very large selection of fish so it's definitely worth a look
