C fish is another type of Asian fish in the catfish family but it's NOT Louisiana catfish. A more inexpensive fish.
C is likely for Crawford. Basically you can not call fish catfish if it's not catfish.
Crawfish are also on the menu I believe when they are in season. Also spelled crayfish or called mud bugs.
