Its a way to track how many people they serve. When you get something to eat at one of the stations they mark it on your ticket. That way they know how much to charge you.

The dining area is setup where you can help yourself or sit at a table where you are waited on by waiter, when you stand in line to get your sandwich they write the total on ticket if you get drinks they write a new total on your ticket. When you pay at the counter in back the attach a receipt to the ticket and you show it at the front. Simple and effective.
