I don't believe it's ever a buffet. You can certainly make it into one if you have a large enough party and order large amounts of food. But it's an order at the counter and have it delivered to your table kind of place every day of the week, as far as I'm aware.
Take your cooler with your favorite drinks, and hot sauce. Buy by the pound and have it cooked or take it home raw and cook at your taste. You can make a buffet as far as your wallet takes you here.
