Well since the time usually has no bearing on the ability of the machines to take cards my guess is they are selling off the books or employees are pocketing cash.

Its because since its a 24hr store they need to close down the system to see how much profit they made in 1 day to have in their books for sales then when they bring it back up is when breakfast starts so it starts their new day. Thats also the time for price changes (if needed) and any updates that needed to be done in the system to go through. Its not just that they cant use cards they cant even use the computers but still need to try to continue the service. Cash only orders get put in the system once its rebooted so its marked for the product that was taken out.
