We were at a wedding this past weekend. A little warm until sunset, then dryer air moved in and was very comfortable....they even turned the big fans off as people were chilly. About as good as you can get for an outdoor wedding in the summer. Great venue for a Texas wedding!
While August can be hot, we have taken aggresive measures to mitigate heat. We have giant macro ceiling fans that move a ton of air as well as a sprinkler system on the roof that cools the tin roof. In addition we do get a great breeze that comes off the hay fields in the evening. In combination this creates a very comfortable semi climate controlled area. If you are looking for an open air wedding but with a controlled environment no other open air venue has taken such elaborate measures to control the climate.
It can be. I believe you can get cooling fans, but I would check the Farmers Almanac for the past temperatures in New Braunfels for your date before booking.
The pavilion and ceremonial estate are all open air which allows for wind the move throughout.
