I know that some dogs and cats don't click. I don't have pets, so I wouldn't be able to help.
Call the shelter for that information.
They won't do a meet and greet with cats and dogs but they will walk your dog past the cat room so they can see the cats and judge how they think your dog may react. That's as close as you will get and from just that it's hard to tell. Dogs also act different in a new place vs. home, their familiar place.
That option can only give you a partial answer. How your pet reacts/acts in their own home will be different. The shelter does have a greeting area outside and.probably inside as well.
