By now you've probably checked into this directly, but the Las Vegas Convention Center is one of the largest facilities if it's kind in the world. You should contact one of the local hotels. Most Las Vegas Hotels (not just the big Casino it Resort properties) have meeting rooms large enough to accommodate an event this size.
