In this climate zone, gardenia are house plants. Deer don't normally come that close to eat. That said, if you have a more specific question on "deer proofing'", Plant scape is an excellent resource for information.

Yes deer will eat anything that is green this time of year (plants ) call pantscape ! Or try red pepper Human urine does work the best ! No joke
