They do have baba ganoush which is made of eggplants!
We actually have two items made of eggplants. Baba ganoush (mashed roasted eggplants and tahini) served as a dip. And the other item is sabich. It's fried eggplant served as a vegan sandwich or a bowl with different sides to chose from.
Eggplant is disgusting that's why it's not with the food. I hate it when mahmouds corner puts it in the food.
