We have hand sanitizer located directly on the pass, by the front door as well as by the host desk, as well as multiple handwashing stations located in the pass, in the kitchen and by the dish pit. If you dont see a server washing their hands it is likely because it is taking place in an area specifically designed to be close to mess that is kept away from the customer. I for instance always wash my hands after delivering dirty dishes to the back so naturally you wouldnt see me using that station. This is also one of the strictest locations on putting on gloves before delivering food. If you see an obvious cross contamination yes speak to the manager otherwise rest assured we have your safety (and ours) in mind.
I can't say why but most business when you bring it to their attention. They will be accommodating to the customers. I will take notice the next time I go and suggest it to see if there is a difference.
