How do you get there, from NYC without a car? lol I've been googling it and it says no public transportation there.

The train station is not far so you could do lirr to Huntington and then take a cab. It's only about a mile or 2 down the road.

Take LIRR from Penn Station to Huntington. Call an Uber. The train station is probably 7 min away from the Paramount. There are taxis too, but they will charge you an arm and a leg.

LIRR is really easy. Taxis available all the time.
