I have a legally blind friend ( tunnel vision in the one working eye) and she really wants to try the carts out (it's the closest she will even get to actually driving) would she be able to race with all our friends?

Shouldn't be a problem. Just use the older, slower cars, and if they are not busy, it would just be you and your friend's carts on the track. At worst she will crash into the tires a few times and seem like a bad driver.

If your both on the thinner side they have two seaters that might work. I would call and ask them if she can ride alone.
