It's probably good to call the head just in case they're very busy but most of the time walking in this good as well. However it's a if it's a special bike fitting you definitely want to call ahead to make sure that the right person is there for you to fit you.
Yes. You can just walk in and speak with one of the very friendly staff. If it is busy you may have to wait for one of them to finish with another customer. They will most likely have your bike assembled by the next day if they are busy. If they are having a slow day they can have your bike assembled, tuned, and fitted for you within an hour or two, maximum. They are very friendly and treat every bike with care and respect, even if you didn't purchase it from them. Out of all the bike stores within a five mile radius, this is without a doubt the best to take any bike.
