Does anyone know how large of a check you can cash

The normal limit to cash is $2,500. During tax season the Maximum limit is $7,500

I don't think there's a limit. I've cashed some fairly large check's at the Walmart in Los Banos. $2000 plus dollars. There was a fee for it. The larger the check the more they prefer you put it on a debit card.
