Most of the Amish shops do except the pretzel/ice cream shop which is cash only. Not sure about other stores.
All of the food vendors including the gluten free grocer take credit/debit cards except the soft pretzels they do not. Not sure about the village shops...

Yes, I've never had a problem using my debit card there. At least for the food shops, there maybe some of the nick nack shops in the back area that don't except them. I guess you gotta go and ask around.
Best bet is to call them up and ask what vendors take them.
