The Servers aslo know as Gauchos will come around with meats on a metal skewers and you can tell them , how you want your meat and they will cut you as many pieces as you like. As far as what the meats are.. steak, chicken, lamb l, ribs, pork. Its like 15 different varieties .plus there is a all you can eat salad bar that has, veggies, chesses, shrimp, sushi. They have just what the other person told you. We drive a hour & half just to eat there. It is awesome.
