It's just what it sounds like.
At the Morganton location, they pour a liquid ice cream mixture on to the cold plate surface and then use a scraper to roll up the frozen ice cream. It is done in several rolls. Then placed in a container and chosen toppings added to it. Very fun to watch and eat!
It wasn't hand scooped when I was there but a liquid poured into the cold plate. But the result is still the same.
At this particular location you can watch them make it. They take hand scooped ice cream and flatten it out into a "cold plate" until it's nearly paper thin and then take a scraper and scrape it off the plate and the result is "rolled ice cream". Sort of like rolling up a a sheet of paper, it's really cool!
