Hello, thank you very much for your message. The only reason we do not offer ramen for take-out is because the noodles we use are very delicate after cooking. Ramen is best enjoyed fresh, and the noodles are prone to becoming soggy very quickly. We want our customers to enjoy the dish at its best, and take-out is just not a good option for ramen. Sorry!
I would venture to guess that they don't offer ramen as a takeout item because ramen is supposed to be enjoyed hot and fresh. Letting the noodles sit in the broth for an extended period of time will overcook them and they will absorb the broth turning them to mush. If the noodles are separated and taken home, they'll probably need to be reheated causing overcooking once again. So, I always assumed this rule was in place to protect the integrity of the dish and ensure that you're enjoying it at the peak of its flavor, immediately after it's served up.
