Hi, i dont know much about artichoke varieties, but their store is in the middle of hundreds of acres of the stuff. So i would just look up what the standard variety is in Salinas valley., They might be called Globe. I believe peak season is March thru May. Its a fun, though expensive store
Heirlooms.. Awesome.. You can find them on the web with points of sales.
There are several varieties but I think the ones I grew up on were either heirloom, ir heritage. They are meatier than the globes. We always shopped at Pezzins.
They grow green globe artichokes, but may also grow other varieties.
