That's how they hang on when they are in the water. Unlike most places with oyster beds in the Charleston area they live in silt instead of on a rocky bottom. So they stick together.

Because that is how oysters grow/live in the water. These are literally right off the boat. It probably cuts down on costs too allowing them to be so cheap

These are what is called river oysters! Their cooked in a large streaming pot of water. I have have oysters on the half shell, but I really prefer this tpye and the way they are prepared. Was delicious with cocktail sauce and plain.

I think that's how they are harvested. They aren't the round ones you typically find in a raw bar. They are very tasty
