Booking in advance is almost always required but sometimes during the mid day during the week, you could walk in but its always a big risk (for all escape rooms). Booking online ahead, even if it's just an hour prior, is a better choice than walking in but I have done walk in at other escape rooms, I just don't recommend it. Though, some booking systems will stop offering times for booking a little before they actually start. So a 2:30 room may not be available to book after 1:30 (because it starts in the next hour) or 2:00 (within 30 minutes). So if there is a room you had your eye, that had availability, it might still be open but not be able to book online, if you call though they should be able to still schedule you for the room (unless it filled up). TDLR: book ahead, if you can't do it online, call, if you're super duper desperate you can try walking in but be prepared for disappointment (and for them to be surprised and think you're weird)
Definitely book in advance.
