How do I get a space vendor space during the week?

You have to be Mexican

During the week we are only open Tuesdays ( march - November) and Thursdays (year round) only the outside vendors lot is open these days , simply go early, there should be a line of vendors waiting to get in, head towards the front gate and someone will ask you how many spots u want for the day and simply pay for the spots you want. It's first come first serve so recommend getting there early.
