How do the employees get compensated for working in such extremely hot conditions. There is absolutely no air conditioning and I was in there for a few minutes and felt nausea from it being so hot. Doors were even open.

You need the money. I was a kitchen manager for a decade and a cook for over 30 years, and for the most part you don't notice it until you go into the walk-in, outside, or out front into the a/c, because you're too busy. Or you work for a great company with a/c in the kitchen. But, maybe a reason you are getting food there is because it's too hot to cook in your kitchen, so don't forget what they are doing for you and they DO accept tips also!
