I think they can be both dairy and gluten free as they offer almond or Coconut milk for coffee.
I just called and was told by Amber (she was very nice) she explained that they use a separate salamander and wash their hands change out gloves for allergies, just let them know. She said that they can make everything except for their breakfast burritos gluten free and if you tell your server you are dairy free they can accommodate you as well. *The funky monkey* I think was another thing they couldn't make allergy friendly.
