Yes they should. Im gluten free and they adjust the menu for me with my allergies.
My mother is eating Vegan. They were able to accommodate, it took some extra effort. It was off menu.

I have a complaint about Kokopelli's. It was my favourite place in the world to eat, but since they have been using their gas fireplaces during Winter, we cannot go in due to gas fumes. 3x we have walked in and turned around...I am going to call them, now that i see everyone saying to just call. Sometimes the security of being anonymous makes one feel more comfortable. Just sayin'

Generally these folks are fairly accommodating, but as others have politely pointed out its always best to call ahead for special requests such as these.
