They are only allowed to have chicken cook and out for 10-15 min to ensure freshness. It also takes a few hours to to clean the store. From my experience as a cook in other restaurants it takes a long time for the deep fryers to cool down safely. Typically the last chicken drop is 30 min before close and then fryers off. It's to save time and reduce waste at the end of the day
They close 10 minutes early to start cleaning up and preparing for the next day.
