Calabash is and old fishing village, that has become the seafood capital of North Carolina. Their batter for their fried seafood is known as Calabash style.
By definition, a calabash is an evergreen tropical American tree that bears fruit in the form of large woody gourds. Calabash is also the name of the town that Ella's is located and is named after the gourds produced by the Calabash tree.
A water container, tobacco pipe, or other object made from the dried shell of the above mentioned tropical tree.
Calabash is also because become associated with a certain style of seafood in the area of the town of Calabash. Good eating!
To add to what Kristen said, Calabash was originally called Pea Landing, but when they tried to get a local post office, they found that Pea Landing already existed, so they called the town Calabash after the name of the local river. Which was named after the Calabash gourd.
