Can you please explain: if the course is 3 color coded within the age group, does it mean that one ticket includes all 3 colors or I would have to buy 3 tickets to get on all 3 colors courses?

Adult ticket covers all 4 courses and final zip line at the end, however, you cannot skip course. To go on the final course, you have to finish the first 3.
