If you were leaving from the Stockton area you would ride an Amtrak train from Stockton to Bakersfield and at Bakersfield transfer onto a bus that takes you to Los Angeles Union Station where you make your connection with the chief. The best train to catch to make that connection is the 9:21 train, train 712. And to answer the other question, about Manteca, the train does not stop in Manteca.
