I’m traveling with a few people with severe Fish/Shellfish allergies. Do you they use separate Fryers and Grills for fish and meat products?

I seriously doubt it.

New Orleans is a seafood city. The first thing you should do in ANY food establishment is notify the server of fish/shellfish allergies.
