My guess, since I am a chef, is that vegan/vegetarian places are popular but not enough to support longer business hours. You have to have a larger volume of sales to support the hours.
For us Green Table (we are not a vegan restaurant, we are vegetarian, but we do have plenty of vegan options), it’s hard to sustain long business hours and also we don’t serve alcohol and even if that’s not a must for dinner, it’s something pleasant that most people enjoy.
