Yes you have vegan options
You can order from the menu which got some vegetarian options. I had a vegetarian friend in group during my visit. She ordered fried tomatoes and french fries. From buffet I remember some veg options like - rice, mashed potatoes, okra fry, beans, tomato+okra soup and one more spinach preparation.
Not really sure but the shrimp and grits were awesome!
