Can you freeze these wonderful cookies? If so, how is it best to thaw them?

I would think just let them sit at room temperature. Though, I have never had the cookies last long enough to freeze them, LOL.

Hi! Freezing the Cookies is the way to go, if you don’t want to eat them inside of two or three days. Thaw at room temperature only!! It takes a couple of hours on average. Don’t forcibly reheat them. If you put my cookies in a microwave I’m gonna find out where you live. 😉
